NO GUILT FRENCH TOAST

One of my very favorite breakfasts is French Toast with fresh fruit and pure maple syrup, I stopped having it, It was just too heavy and made my stomach hurt after I ate it. It was full of calories, fat, and sugar! Not such a healthy way to start your day. I usually get an instant headache from the syrup because I would pour waaaaay to much of it over and it made me cranky and sluggish about 30 minutes after eating. I decided to put French Toast on the menu again because, well, I like it and miss it. The whole idea behind my cookbook “Food for Thought” is to still enjoy the foods you love but prepared in a way that is heart, brain, and gut healthy! Here is a recipe that has all the elements you need in a great French Toast that will satisfy you without all the fat, calories, and sugar! Buongiorno!

 

 

INGREDIENTS

Serves 2
1 cup organic raspberries
1 cup blackberries
1 cup blueberries
3  organic eggs
1 cup of coconut milk
½ teaspoon ground cinnamon
1 tablespoon pure vanilla extract
2 teaspoons orange extract
¼ teaspoon kosher salt
3 slices whole wheat, whole grain seeded bread or gluten-free bread sliced 1-1/2 inch thick
3 tablespoons safflower oil
¼ cup fresh mint leaves
1 tablespoon orange zest
1 teaspoon of ground cinnamon,
1 cup pure organic maple syrup
3 to 4 fresh mint leaves per serving for the fruit

DIRECTIONS

Pre-heat oven to 250
Place serving plates into the oven to warm.
In a small bowl add the raspberries, blackberries, blueberries, and mix together gently, set aside.

In a glass bowl add eggs, Coconut milk, cinnamon, vanilla, orange extract, salt, whisk together vigorously for 30 seconds. Pour the mixture into a pyrex pan large enough to hold two slices of bread. Add two slices of bread in the pyrex pan and soak for 2 minutes on one side then turn over gently using a metal spatula to soak for 2 more minutes spooning the egg/milk mixture over the top.
Heat cast iron or heavy bottom skillet large enough to hold the two pieces of bread on medium heat for 3 minutes to get it really hot. Add the canola oil and quickly spread the oil using a pastry brush. Turn the heat to low.
Gently lift the first piece of soaked bread with a metal spatula and place it in the skillet, followed by the second piece. Cook for four minutes then gently flip to the other side for four more minutes.
You want to cook it low and slow at the time suggested because the bread is saturated with the egg/milk mixture and you want to make sure the insides are cooked through and not wet.

TO SERVE
Remove the warm plates from the oven using an oven mitt. Slice each French toast in half and place three pieces on the plate, sprinkle orange zest over top, and a pinch of cinnamon. Drizzle 3 tablespoons of the syrup over!  Serve with the fresh berries on the side.
A fresh pot of brewed coffee and freshly squeezed orange juice rounds off this most wonderful happy way to start your day!
